<p>Woah, last day of Vegan MoFo. Time passed so quickly! I had a great time learning a lot and it feels good to see that there are other vegan foodies out there <img src='http://s.wordpress.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> . Can&#8217;t wait till next year (till then I hopefully had the time to catch-up on all the post I couldn&#8217;t read till today <img src='http://s.wordpress.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' /> ).</p>
<p>So here is my last post: What I love about Vegan MoFo that you get a lot of super-duper vegan recipes (and cooking ideas). I&#8217;ve already made a few and bookmarked many, many more.</p>

<p>First of all, best discovery EVER: <a href="http://kitteekake.blogspot.com/2009/10/code-word-potato-crepe.html" target="_blank">Kittee&#8217;s Masala Dosa recipe</a>!!! I&#8217;ve tried dosas before with soaking rice and mung dal and pureeing both, mixing it together and so on. Waiting days until they were ready to be cooked. And they failed. But this recipe uses rice flour!!! Let&#8217;s just say they were a huge  hit and this recipe is a keeper. You can make a big batch and let them sit in the fridge until a dosa craving strikes! (I think they even taste better after resting for a few days).</p>
<p>Then: <a href="http://seitanismymotor.wordpress.com/2009/10/09/vegan-mofo-stuten-a-sweet-yeast-bread/" target="_blank">Mihl&#8217;s Stuten recipe</a>. I made it the same day she posted it and ate it with a cup of hot cocoa. Childhood memories!!</p>

<p>Who can resist <a href="http://theppk.com/blog/2009/10/07/edamame-pesto-a-totally-satisfying-low-fat-manifesto/" target="_blank">low-fat pesto filled with yummy edame</a>?? Not me!! I used arugula insted of cilantro (&#8217;cause this was all I had).</p>
<p>I also made a panini one day for lunch, <a href="http://vegetarianescapades.blogspot.com/2009/10/perfect-panini.html" target="_blank">spotted on this blog</a>. I used grilled zucchini, arugula and tomato. Bliss!!</p>

<p>1 pkg. vegan phyllo dough<br />

<p>Heat oven to 325 °F. In a pan melt the margarine and add the bread crumbs. Keep stirring the whole time until the bread crumbs have a light brown color. Set aside. Cut the apples in thin slices. Roll out the phyllo and brush in between sheets with margarine or oil. Put the apples on the dough and sprinkle on sugar, bread crumbs, cinnamon and raisins. Fold in the two sides and role the whole thing up. Bake for 30-40 Min.</p>

Äpfel auf dem Teig verteilen (oben ein Stück frei lassen), mit Brösel, Zucker, Zimt und wenn gewünscht Rosinen bestreuen. Seiten einklappen und vorsichtig aufrollen. Im Rohr ca. 30-40 Min. backen.</p>

<p>I don&#8217;t know what it is but every vegan cookbook lately has a plantain recipe. When I shopped at the Naschmarkt (large market in Vienna) a few days back I saw some that had a &#8222;yellow color and black spots&#8220; (as every book describes it), I bought three to give them a try. Today I fried them in coconut oil. They are quite starchy and kinda bland. I seasoned them with salt but I think some chili powder or curry powder would have been nice. Or garlic. I served them with a black bean soup but they are a nice snack too! Has anybody else made them? What recipes have you tried?</p>
<p><strong>Plantains</strong></p>

<p>3 plantains (should be yellow with black spots)<br />
coconut oil</p>
<p>Peel the plantains and slice about 1/2 inch thick. Heat 1-2 Tbsp. of coconut oil in a pan and add the plantains. Fry until they have a nice yellow color. Flip and fry on the other side.</p>

<p>250 g schwarze Bohnen<br />
1 EL Öl<br />
1 Zwiebel<br />
3 Zehen Knoblauch<br />
2 Karotten<br />
1 Chili<br />
1 l Gemüsebrühe</p>
<p>Als Garnitur (optional):<br />
Avocado<br />
Tomate, ohne Kerne und gewürfelt<br />
Koriander, gehackt</p>
<p>Bohnen über Nacht einweichen. Wasser wechseln und ca. 1-1 1/2 Std. gar kochen. Zwiebel und Knoblauch hacken. Karotten schälen und würfeln. Zwiebel und Knoblauch im Öl anschwitzen. Karotten dazugeben, sowie feingehackten Chili (Menge nach Belieben). Mit Brühe aufgießen und ca. 15 Min. köcheln lassen, bis die Karotten weich sind. Bohnen dazugeben und pürieren (bis zur gewünschten Konsistenz). Mit Kochbananen servieren und beliebig mit Avocado, Tomate oder Koriander garnieren.</p>

<p>3 Kochbananen (Schalen sollten gelb und mit schwarzen Flecken sein)<br />
Kokosfett</p>
<p>Kochbananen schälen und in 1 cm dicke Scheiben schneiden. 1-2 EL Fett in einer Pfanne erhitzen. Kochbananen einlegen und braten bis die Unterseite gelb-braun ist. Danach wenden und auf der zweiten Seite braten. Aus der Pfanne nehmen. Die Bananen haben einen neutralen Geschmack, daher wenn gewünscht mit etwas gepressten Knoblauch oder Chili würzen und salzen und pfeffern. Mit der Suppe oder als Snack servieren.</p>

Die Auswahl der Rezepte ist sehr gut getroffen, diese sind authentisch ohne eine Unzahl exotischer Zutaten zu verlangen. Nur das Dessertkapitel hätte etwas länger sein können <img src='http://s.wordpress.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' /> .</p>

1/2 tsp. tumeric<br />
1/4 tsp. cayenne pepper<br />
1/2 tsp. cumin<br />
1/2 tsp. coriander<br />
about 6 oz. firm tofu<br />
lemon juice<br />
salt</p>
<p>Cube the tofu and smoosh it a bit with a spoon. Drizzle on lemon juice and sprinkle with salt. Heat oil in a large pan. Add onion and garlic and spices. Add spinach and when spinach has wilted a bit add the tofu. Serve with chapatis or rice.</p>
