This book is perfect for vegans who love to eat fresh prepared food but don’t have much time. Mark Reinfeld and Jennifer Murray deliver over 175 recipes for breakfast to lunch to dinner that can be on the table in 30 minutes or less. All recipes use mostly fresh ingredients – fruits, vegetables and cereals. The range of recipes is broad: there are many raw recipes (I’m dying to try the Live Cinnamon Rolls :)) but also occasionally ones that use vegan cream cheese or sour cream. Although I’m working from my home office most days of the week, I don’t have time to cook a lot. This book is greatly appreciated!
