2 medium parsnips
2 medium potatoes
1/2 tsp. raz el hanout (or cumin)
1 tsp. sweet curry powder
Preheat oven to 400 °F. Peel parsnip and potatoes and dice. Peel onion and cut in half and slice. Coat everything with a little bit of oil and roast for about 20 minutes. In the last 5 minutes add the spices and toss to coat everything evenly. Add salt to taste.
